Pilot made some delicious gluten-free peanut butter cookies over the weekend. They are wonderful. Hard to believe something without wheat could taste so good.
Here is the recipe, in case you are interested.
- 1 large egg
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1 cup creamy peanut butter
- 1/2 teaspoon gluten-free vanilla extract
- 1/3 cup chocolate chips (optional) Our cookies did not have chocolate chips.
Preheat oven to 350°F.
Beat together egg, sugar, baking soda and vanilla with a mixer. Beat in the peanut butter. Stir in chocolate chips if using.
Drop dough by teaspoonfuls onto baking sheet, pressing lightly with the back of a fork. (Pilot dipped the fork in sugar, before he pressed it into the cookie dough.) Bake for 10 minutes, until lightly set. Transfer to a wire rack to cool.
Pilot thinks he might use brown sugar instead of white sugar the next time. I would like to substitute chunky peanut butter instead of creamy.
This recipe made about 2 dozen three inch cookies.
