Pilot has several “signature” creations he cooks. One of my favorites is his shrimp and noodles. He has agreed to share his recipe. I think you will agree, it is fantastic! As an added bonus, this post also contains Pilot’s Avocado/Artichoke salad recipe.
Shrimp and Noodles
- Gluten-free spaghetti noodles for two people (I like Schar brand)
- 1 teaspoon garlic powder
- ¼ to ½ cup Romano or Parmesan cheese, fresh grated
- 1 tablespoon minced onion
- 2 teaspoon Chesapeake Bay-Style Seasoning
- 2 tablespoon vegetable oil or olive oil
- ½ tablespoon butter
- ½ pound shrimp peeled and deveined (I use frozen shrimp)
Prepare enough gluten-free spaghetti noodles for two per package direction. Add oil to water to keep noodles from sticking together. Make sure you cook gluten-free noodles according to the time on the package, as they may get mushy if over-cooked.
In a serving bowl, combine all remaining ingredients, except the shrimp. When the noodles are done, remove noodles from water using a spaghetti strainer. Preserve the boiling water.
Place noodles in the serving bowl with the oil and cheese mixture.
Place the shrimp in the boiling water from the pasta, and boil for 3 to 5 minutes, or until pink.
Meanwhile, gently toss the pasta with the oil and cheese mixture. When the shrimp are done, strain, and add the shrimp and any stray noodles remaining from the water, to the serving bowl with the pasta and oil and cheese mixture.
Toss gently and serve immediately. Add more Old Bay, if desired.
Serves 2
Measurements are approximate, so feel free to add more or less depending on your tastes.
Avocado/Arichoke Salad
- ½ cucumber, seeds removed and diced
- 1 tomato, seeds removed and diced
- ½ green pepper, diced
- 1 avocado, sliced
- ½ jar artichoke hearts, diced
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 Tablespoon mint
- 1 teaspoon lemon or lime juice
- 1 teaspoon minced onions
Combine all ingredients in a bowl and toss. Serve with favorite Greek dressing. Substitute the avocado with feta cheese and kalamata olives, if you don’t have a ripe avocado on hand.
