While driving past a pizza joint Pilot and I frequented, more often than we do now that I’m gluten-intolerant, I lamented how much I missed eating meatball subs. To which Pilot commented, he would create gluten-free meatball subs for us. Yes!
Because meatballs contain wheat in one form or another, eliminating that was the first step. Buying gluten-free sub rolls was the next. Armed and ready to tackle the assignment, Pilot set to work.
- 1 lb ground beef
- 1/4 Cup Choice Batter (If you can’t find this at your store, I would think crushed Rice or Corn Chex would work.)
- 2 eggs
- 2 Tablespoons water
- 1 Tablespoon garlic powder
- 1 Tablespoon dried minced onion
- 1 teaspoon basil
- 1 teaspoon oregano
- 1 teaspoon dried red pepper flakes
You will also need gluten-free sub rolls, (I use Schar baguettes.) one jar of pizza sauce – heated, and shredded mozzarella cheese.
Preheat oven to 350 degrees F.
Mix the first 9 ingredients together. Shape into meatballs.
Brown meatballs in hot oil. Drain meatballs on paper towels. Bake in covered casserole dish for 20 minutes.
Place meatballs on gluten-free sub rolls. Sprinkle with mozzarella cheese. Spoon heated pizza sauce over meatballs. Top off with more mozzarella. Place in microwave, 2 minutes, or until cheese has melted.
