While on Oahu, Hawaii, Pilot and I saw signs on the road advertising Huli-huli Chicken. We had no idea what it was. Sure wish we knew then what we know now!
Once home, Pilot searched for a recipe for Huli-huli, and this is what he came up with for the grill. Pilot grills pineapple slices at the same time. Delicious!
- 1 chicken cut-up
- 1/2 frozen pineapple concentrate
- 1/2 cup Gluten-free soy sauce
- 1/4 cup ketchup
- 1 finger of fresh ginger, grated fine
- couple cloves of garlic, crushed – Pilot uses 3
- 3 Tbs brown sugar
Mix all the ingredients together and marinade the chicken for at least 1/2 hour before grilling.
Fire up your grill. When ready, place chicken on grill.
Huli-huli means turn over, turn over. So, that’s how you cook this chicken. 🙂
Cook until done. About an hour.
